Few Thai dishes have become more standardised in the West than Thai green curry yet in Thailand there are many regional variations to this dish. This is one of them. The heat comes from the tiny bird's eye chillies that are added to so many dishes in Southern Thailand. Yes, it's hot but the complex array of flavours still come through to tantalise the taste buds and it's wonderful with a cold beer! This is really a curry for the heat lovers, lesser mortals may prefer a medium spiced Thai green curry like the Bangkok Style Green Curry.  Or for those of you want the mildest curry experience possible we now have a Mild Thai Green Curry paste.

Thai green curry with a kick

I recently purchased the Southern Thai Green Curry Paste from mythaicurry.com. I love a Thai green curry but also love it spicy, so when I read the description, I had to try. It is exactly as it describes. All of the usual Thai green curry flavors including lime leaves, galangal & lemongrass but with an extra kick from the chillies. This paste will be first in my next basket for sure.

Fragrant

This is yet another treasure! Really nice, quite delicate flavours. Quite hot enough to my taste- my wife likes it like milder (I’m inclined to add a bit more chilli if she’s not watching.
I’ve done this with both chicken and monkfish. The fishy version is particularly successful.

Loved It

Made this curry with cod and a good coconut milk. Went down a treat with my fish loving partner. Threw in a handful of prawns as well. This is a definite “ buy again”
